year end kid's class 年末子供お料理教室
実は年末から気管支炎をこじらせて先週まで寝込んでしまってました。。。あ〜、毎年体力の衰えを感じる。で、今頃去年の写真をアップしておる訳です。去年最後の子供教室はこんな感じでした。
I caught flu around Christmas time last year and that developed into nasty bronchitis. I was literally "out" for good 2 weeks. So much for the holidays...I spend in my bed. Anyway, finally I'm updating my blog. As a year end class, we did something really fun!

うわ〜ってまず観察。これが目、口、あれ、鼻ってある?くちばしってちょっと怖いね。
First, take a good observation. Where are the eyes, mouth, does it have nose? The beak looks scary!

たこ焼きじゃなくってイカ焼きです。
This is an octopus ball maker. Today, we'll be making squid ball instead of octopus.

さむ〜〜い! Freezing!!!
予定では今日は魚さんまで皆でいってタコを丸々一匹買って来てたこ焼きを作るはずだった。が、外はもうツンドラ気候。。。とても人間が歩くべき気温ではない。幸い普段は元気一杯の子供達も今日に限っては外に行くのは気が進まぬようだ。ラッキ〜! 急遽メニューを変更して、皆大好きなおにぎり、唐揚げ、そして、撮影に使ったフィロペイストリーを使ってアップルストルードルを作りました。

Our original plan was to go to the fish store and get a whole octopus and make octopus ball (takoyaki). Plan is just a plan. With this freezing temperature, even the kids didn't want to go out side...lucky for me. Change of the plan comin' up! Today's menu: kids' favorite rice balls, Japanese style fried chicken and oh yeah, who can say "no" to warm and sweet apple strudel freshly out of the oven?!

これは何時食べても美味しいね。鳥の唐揚げ。
This was a huge hit. Seasoned with soy sauce and mirin...yum!

一人リンゴをひとつ皮を剥いて薄切りにしました。簡単だけど丁寧に作ったよ。
Each children peeled one apple and sliced them thin. So easy, but makes such a big difference when we put our heart and soul into it. Look at this beauty!

パリッパリの皮とジューシーなリンゴがもう。。。。最高。
Paper thin crispy crust and the juicy apple filling....to die for! Gone in a second.

嫁入り修行真っ最中! Girls' night out cook out party!
今日はお誕生日パーティーをかねてのお料理教室。楽しいガールズ達が元気よく寒い中やって来ました。メニューは家庭料理定番の肉じゃが、きんぴらごぼう、お味噌汁、五目ご飯、お浸し,胡瓜と若布の酢の物。君たちをお嫁さんにする人は幸せ者じゃのう。
Today's cooking class was for a Birthday party cooking class. 4 enthusiastic foodie young ladies came in this freezing weather. Today's menu was the typical Japanese home style cooking, aka, "mom's taste". Simmered beef with potato, seasoned burdock root, miso soup, gomoku seasoned rice, nappa cabbage ohitashi and cucumber with wakame seaweed in rice vinegar. Gosh, your husband to be are lucky dudes!

お弁当クラス Kids' bento class
今日はそれぞれお弁当を作りました。みんな、食べ物で多いに遊ぶ事!ルール無し、がルールだよ。
Today's kid's class was making the bento boxes. Each children made their own. No rule is the only rule here...and don't forget to play with food! Go a head, have a blast!

最近のお料理教室 Latest cooking classes
忙しいけど、お料理教室ちゃんとやってますよ〜〜。写真を取る暇がないのでちょっとしかありませんが。。。今月はお誕生日プレゼント用のお料理教室が多いです。カップルの。相手のプレゼントに寿司クラスをプレゼント、というもの。プレゼントなんだからスペシャルでないと、とこちらも力がはいりますがな。
It's been crazy busy, but I'm doing cooking classes as well. Sometimes I don't even have a chance to take a photo, but here they are. This month, I'm giving many sushi classes for a birthday present for some couples. People enjoy giving my classes as a present to their partners for their b-day. I think it's really a brilliant gift for a wife to give her husband.....she gets to enjoy the class together with her hubby and later, enjoy the food he makes at home. Nice!

天ぷら蕎麦!Hot soba noodle with tempura!
先週に引き続き『日本の麺』シリーズ。今日はお蕎麦。風がびゅーびゅー寒いので、天ぷら蕎麦が最高。
Continues from last week, we've been cooking with Japanese noodles. Today, with cold wind blowing out side, we made hot soba noodle topped with shrimp tempura. Yum!

さて、まずは天ぷら用の海老の処理から。今日は頭付きに挑戦。頭から味噌が出る度に『きゃ〜〜』と大騒ぎ。全部剥き終わるまで悲鳴がつづいたのあった。
First, they cleaned the shrimp for the tempura. Today, I got some head-on-shrimp....everytime they pulled the head off and the inside came out, there were massive screaming...till they finished peeling the last shrimp, the scream continues.....I bet our neighbor was wondering what the hell was going on here.

それから竹串で背わたを抜きます。
Then pull out the guts using bamboo skewer.

蕎麦も茹でてしっかり冷水でしめます。温かい麺ですが一度しめると美味しいのです。
Cook the soba noodle and risk under cold running water to get rid of all slim on the surface. It will be in the warm broth, but it's critical to wash and cool the noodle before warming up again.

子供お料理教室 kid's cooking class
今日のお題、日本の麺類。色々あります。まずはお店にいって、そば、うどん、ひやむぎ、そうめん、きしめんなどを比較。そこから、『そば』と『そうめん』を買ってきました。

Today, we covered the mystery of Japanese noodles. Soba(buckwheat noodle) and udon noodle are quite familiar to many people, but there are lot more than those two. We first visited the store and compared "soba", "udon","hiyamugi", "somen" and others. Then we picked "soba" and "somen" to compare @ the class.

麺類で大事なのは茹で加減としっかり冷水でしめること。がんばって。。。手が冷たいね。
The most important thing when it comes to cooking some perfect noodle is the cooking time and after cooking, to rinse throughly under the cold running water....work it children! Work it!!

もう、無我夢中で食べる、食べる。あっとう言う間になくなっちゃった。さて、日本の麺はずずっとすすっても良いのです。皆でズズッの練習。。。家で怒られたら、日本ではいいんだ、と言ってもいいよ。
They ate, ate and ate...all were gone just like that! Here is the truth. In Japan, it is considered OK to slurp noodles. Something we all raise our eyebrows here...but only when eating Japanese noodles here, I had children practice their slurping skill. They all did such a great job and now, all became slurp masters.....sorry moms...I had nothing to do with it....maybe a little.

子供クラス:餃子  Kid's class: gyoza dumpling
今日は待ちに待った餃子クラス。野菜を切って豚肉やら調味料と混ぜる所からきっちりやりましたよ。私、ぞうきん片手に秘伝の佐々家餃子伝授。初めはぐちゃぐちゃの餃子しか出来なかったけど、段々上手になって、しまいには、餃子屋さんを開けるくらいちびっ子が上達しました。帰ってお母さん達に教えてやってくれたまえ。
Today was the long waited "gyoza" dumpling class. We started out from cutting all the veggies and mix them with seasonings and the ground pork. I had my trusty wash cloth by my side (to clean all the mess, of course) and thought my secret dumpling recipe to the little ones. At first, they were making flat and sad dumpling, but eventually, they were as good as to open their own dumpling shops.

蟹教室  Crab cooking class
子供お料理教室です。今日は覚悟を決めて"蟹”。
Children's cooking class today. Today's theme is "crab"....a live one that is.

お魚屋さんで生きている蟹を買いました。
We visited our local fish store and got some live crabs!

生きている蟹を初めて見た子もいたので、まずはじっくり観察。初日ということでシンプルに茹でガニ。さばき方を伝授したのですが子供に蟹を食べさせる作業はかなり大変。写真なんて取っている余裕は無い。でも皆食べる、食べる。キャンディーの様に剥いた蟹をポイポイ食べる。こうやって1つずつ未知の食材に慣れ親しんでくれるのは嬉しい限りである。
Some of the children saw live crab for the first time. Since it was the first crab class, we simply boiled them. I taught them how to eat the blue crab, but oh boy, it was so much work to have children eat the crabs.....no time to take any pictures. They all enjoyed eating crabs...they popped the peeled meat like candies! It's pricesless to see the childresn try out the new ingredients and develop t heir pallets!

りんご飴とライスバーガー Candied apple and rice burger
今日は子供お料理教室。週末の収穫を使って。。。

お砂糖、水、食紅をぐつぐつ煮立てて、そう、あたしは魔女です。。。ヒッヒッッヒ。りんご飴できたよ!
Cook sugar, water and red food color until "cracking point"...bubble, bubble, bubble....feels like I'm a real witch.hee, hee, hee! Oh, but I'm a good witch...here, have some candied apple!

余ったシロップでローリーポップも作りました。
With the left over syrup, we made some lollipops. Cute, aren't they?

さて、今日のメイン。ライスバーガーです。まずは、ご飯を付きます。これはハンバーガーのパンの代わりにご飯を平たくして、タレをつけてこんがり焼いてバンを作る為です。
Now, the rice burger. First, we pound the rice to make "bun". We pound the rice, form into a flat disk, put some soy sauce base sauce and grill.

次は中に挟むハンバーグです。和風なので葱タップリ。みんな混ぜるのが大好きで、はりきってこねてくれてます。
Next, the beef patty to go in between the rice bun. It's Japanese flavor, so instead of onion, green scallion goes in. Seasoned with soy sauce, sake and ginger. Kids loved the mixing part!

ちょっとでっかいライスバーガー出来上がり!ケールチップも添えて。モスバーガーのより大きくて美味しいよ!
Tada! Gigantic rice burger! Next to it is a kale chip. Yummy and healthy rice burger menu.
