饗屋 restaurant "Kyoya"
ずっと行きたかったイーストビレッジにある饗屋、ついに行ってきました。看板もなく、ストリートレベルから階段をおりた所にひっそり、でも堂々とある入り口。それほど広くはないお店をずずず〜と奧に進むと、御料理人、園さんの前のカウンター席があります。そこで、勿論、御任せメニューをいただきました。
I've been wanting to go to this amazing hide away in East Village for such a long time. Finally I had a chance to taste chef Sono's culinary art of work. Oh, and I strongly recommend sitting at the chef's counter where you can interact with chef Sono and watch his craft man ship.
写真がかなりひどいですが、これはなすを細くきって、薄味のダシに浸したものです。ここのお出汁は本当に美味しいです。
thinly sliced eggplant in dashi. It takes so much skill to make dashi this good.
冬瓜の流し汁の中にジャガイモと白玉でできたお団子が。ジャガイモの風味が冬瓜の優しい汁とピッタリです。
winter melon soup with potato and rice powder dumpling. The delicate balance with wintermelon and potato was so pleasant.

大好物のジュンサイ。何だか本当に日本に来た気分になりました。
This dish is such a delicacy in Japan. The vegetable is called "jyunsai" and has very unique texture. It's like a plant covered in jelly..one of my absolute favorite.
湯葉とアスパラの豆乳しゃぶしゃぶ。クレソンのたれに浸けて食べます。。。もう、最高!実はこの後に鮎の姿焼きが出たのですが感動しすぎて写真をとる前に食べちゃいました。
Soy bean shabu shabu with yuba(tofu skin)and Asparagus . The watercress sauce was also unique and delicious. I forgot to take a picture of grilled ayu (sweet fish)..it was also my favorite and I got so excited and just took a big bite...
ここまでで、もうお腹が一杯だったので、お食事は持ち帰りにしてもらいました。デザートがまた美しい。。。紫蘇のシャーベットとフルーツの盛り合わせ。
We were too full for the rice dish, so asked to pack it to bring home. The dessert was also beautiful...shiso sorbet with assorted fruit balls.
家に帰ってみてみたら、御持ち帰りのお食事、こんな風にしてありました。すごいなあ。とても勉強になりました。園さんはとても気さくな方で、作り方なんかも丁寧に教えて下さりました(とはいえ、とても真似はできませんが。。。)。伝統的な技術でありながが、新しい食材も取り入れて、本当に丁寧で美味しいお料理ばかりでした。また是非御邪魔したいです。がんばって働こっと。
They made rice balls with the rice dish and packed them in the bamboo skin.....wow. Everything was so beautiful and tasty. Chef Sono was so friendly. He even told me how to make some of the dishes...not that I can do the same. He uses traditional techniques while experimenting some new and local ingredients. It's like innovative Japanese traditional cuisine. I'd love to go back for more!
