鈴木ファームの茄子 egg plant from Suzuki Farm
美味しい野菜で有名な鈴木ファームの茄子です。4本で4ドル。茄子としてはかなりドキドキするお値段です。特に高山の朝市で採れたてで、まだトゲトゲがついてる新鮮茄子が一袋8個入りで100円だった事を思うとこれは高い。でもここNYではしかたがないのですな。背に腹は変えられる。この様な良い茄子が手に入るだけでも幸せと思わねば。
These are Japanese eggplant from Suzuki Farm. 4 eggplants cost $4....pretty steep price for the eggplants. BUT, these are raised with special and care and taste beyond awesome. In Japan, you can get these for so much less, but here, I should be thankful that I can even get these.
まず2本は焼き茄子でいきます。
First, two will be grilled eggplant.
これは母直伝。直接火で炙ります。
My mom taught me this technique. Grill with direct heat. You have to baby sit them, but result is amazing.
このくらいまでしっかり焼いてね。
Grill until all the skin are blistered like this.
熱いうちに皮を剥きます。ぺろんと簡単に剥けますよ。
Peel the skin while it's hot. It comes off really easily.
鰹節、お醤油、生姜を乗っけて頂きます。茄子が甘い!日本では一人2本くらいペロリですが、ここでは貴重品。ゆっくり味わっておくれよん。
Serve them with bonito flake, soy sauce and grated ginger. Can you believe the eggplants taste sweet? Well, they do. Taste just like my mom's....
3本目は薄切りにして昆布茶の素をふりかけ、ジップロックに入れて揉みます。
The third one, I sliced thin, put them into the ziploc and sprinkled konbu tea seasoning ( can be substituted with one tea spoon of salt)
はい、即席浅漬け。これはアクが少ない日本の茄子ならではの一品。
Voila, quick eggplant pickles. Japanese eggplant has less bitterness, so you can make this dish only with Japanese ones.
そして、最後の一本はお味噌汁で頂きます。う、旨い!
The last one is for the miso soup. Sooooo yummy!
有頭海老の炒り煮。
Seasoned head on shrimp with sake, soy sauce and mirin.
幸せご飯。
To me, this is a perfect dinner with big H for Happy time!
